Choco mini-cakes

Ingredients:

  • Wheat flour – 1 1/2 cup
  • Brown sugar – 1/4 cup
  • Cocoa powder – 1/2 cup
  • Chocolate chopped – 1/4
  • Baking soda – 1 tsp
  • Lemon juice – 1 tsp
  • Salt – 1/2 tsp
  • Pure vanilla extract – 2 tsp
  • Coconut butter – 1/3 cup
  • Apple cider vinegar – 1 tsp

Preparation:

Mix together cocoa powder, wheat flour, brown sugar, salt, pure vanilla extract, coconut butter and apple cider vinegar, then add baking soda (soda must be repaid in the lemon juice). Thoroughly whisk it all until smooth. Pour into your cake forms about 2/3 of the way full and add chopped chocolate. Bake 20-25 min in a preheated oven set at 180-190°c, or until a toothpick inserted into the center comes out clean. Wait and enjoy!

These choco mini-cakes taste so nice with a thyme black tea ∧∴∧

Vegan nutty mini cakes with goji berry

Ingredients:

  • Wheat flour – 2 cups
  • Brown sugar – 1/2 cup
  • Baking soda – 1 tsp
  • Salt – 1/2 tsp
  • Orange juice – 1 cup
  • Apple cider vinegar – 1 tbsp
  • Goji berry – 5 tbsp
  • Vanilla extract – 1 tsp
  • Dark + milk chocolate for topping – 12 squares
  • Coconut butter – 150 g
  • Almonds – 1/4 cup
  • Sunflower seeds – 1/4 cup
  • Sprinkles – 3 tsp

Preparation:

Soak almonds for about 15 minutes, then remove the peel and chop almonds.

Mix together brown sugar, salt, orange juice, apple cider vinegar, vanilla extract and melted coconut butter. Then add the flour, goji berry, chopped almonds and sunflower seeds. Whisk all ingredients together. Pour our batter into the cake forms about 2/3 of the way full. Bake for 20 minutes or until a toothpick comes out clean in a preheated oven set at 170 °c. Put 2 squares of dark+milk chocolate and sprinkles on each mini cakes.

What can make your kitchen homier than the smell of fresh-baked bread?

Homemade bread

Ingredients:

  • Dark rye flour – 1 1/2 cup
  • Wheat flour – 2/3 cup
  • Rye malt – 1/4 cup
  • Malted barley flour – 1/2 cup
  • Molasses – 5 tbsp
  • Compressed yeast – 1 tbsp
  • Coriander – 4 tbsp
  • Cumin – 3 tbsp
  • Sugar – 4 tsp
  • Salt – 1.5 tsp
  • Olive oil + sunflower oil – 5 tbsp

Preparation:

Blending cumin, coriander.

Mix the dry ingredients together, add warm water (350 g), the other ingredients and knead dough by hands until it easily comes off the hands. Leave the dough for about 5 minutes. Then form it into dough balls or whatever you want. Put them on a baking tray and wait for dough to swell(about 15 minutes). Bake until done at 180 °c . For me it was 10 minutes. 

This dough is also suitable for baking russian borodinsky bread.

Raw vegan candy balls

One gloomy morning my little glutton inside me wanted something sweet, and we made these no-bake raw vegan candy balls.

Ingredients:

  • Banana – 1
  • Kiwifruit – 1
  • Cacao – how much you want, i added 5 tbsp
  • Dates – 7
  • Sesame for topping

If you want a more sweet taste, can add any liquid sweetener such as maple syrup, agave nectar or liquid Stevia.

Preparation:

Blend all ingredients. Then make balls from our dough and gently roll the balls in the sesame seeds. Done!

Place in the refrigerator for about 30 minutes or can eat now.
